Holidays and Pancakes

I am back in business after having one of the most incredible holidays ever!

FACTS AND STORIES ๐Ÿคท๐Ÿป‍

-just me and my husband. PERFECTION! We indulged in each other’s presence. No playlist, no music, no radio, no nothing. We realised that we didn't listen to any music or radio on our way back home, at 50 km from home.

We talked to each other, admired everything around us and enjoyed the journey!

This is how we like to roll! ๐Ÿ’ž

-11 days in total, gravitating around the Arctic Circle -> 6 of them at 250 km North of the Arctic Circle.

-4101 km driving (2550 miles)

-nightless days (I mean the sunset was at 00:19 am and the sunrise at 01:00 am ๐Ÿ˜Ž๐Ÿ˜Ž)

-hiking in the oldest national park in Europe (Abisko

-had my feet on the edge of Sweden/Finland and Sweden/Norway. What can I say, I am an edge addicted! ๐Ÿ˜…๐Ÿคท๐Ÿป‍

-pristine waters, unique landscapes, reindeers (stupidly๐Ÿ™„) strolling on motorways or on 100 km/h-roads

-eating on the road and not skipping a beat about what/when/how to eat

-tested twice to eat breakfast again, and it’s still a freaking NO! My body rather fasts with a black coffee in the morning and lots of water until 5-6 pm than having breakfast! EVEN IF WE HIKED! – if your brain tells you that preventative eating needs to happen, question that! Test it and see what happens! You might be surprised! ๐Ÿ˜Š

-FLYING BUGS, especially mosquitoes, black flies, and some sort of rabid horseflies. ๐Ÿคฎ๐Ÿคข – Portable mosquito-killers and Centaura saved us. ๐Ÿ˜‚ (Centaura is a vet-product and an effective insect repellent for horse, dog, and rider. Rider meaning HUMANS as well! Exquisite!๐Ÿ˜ƒ)

-FINALLY got my second COVID-vaccine on our way down home! This was the reason for not extending the holiday more.

 

I would do the journey again.

I will for sure go back up North to revisit or to have longer stays in some places.

I will try to visit the ICEHOTEL once every year because they throw back into the river all the ice-art/sculptures and all the icy-room decorations and create new ones every year. ๐Ÿ’™โ„๏ธ๐Ÿ’™

 

What about pancakes?๐Ÿฅž

 

Well, for our last three days, we picked one of the oldest ski resorts in Sweden. We had breakfast included in the price of our rooms throughout the holiday (with just two exceptions), including at this resort.

 

And I saw their pancakes which looked amazing. And smelled amazing.

 

Now, I did want pancakes.

 

BUT, I also knew for sure that even if they looked great, I wouldn’t like their taste and how I’d feel in my tummy the day after.

 

For 6-7 years ago, I would have eaten all the pancakes then and there. And I would beat myself up for not being able to “resist.”

For 4 years ago, I would have planned it in advance and eaten the pancakes the next day. Without beating myself up. Just experiencing being bloated, feeling bleah in my tummy, swollen in my joints, and retaining water like crazy the day after eating them. ๐Ÿคท๐Ÿป‍

 

What did I do now?

I felt PATIENCE and CALMNESS! No stress, no pressure.

 

What were the thoughts I practiced and believed in those moments?

 

“I know I can eat and have anything I F-ing WANT to eat. “

“I don’t ever RESTRICT myself. “

"I know FOR SURE that I don’t want to feel bloated, and bleah, and puffy tomorrow".

 

So, I waited until we arrived back home, and until I was rested and I could enjoy making the pancakes.

This Saturday I made pancakes and I ate pancakes!

Made with just eggs, oats, bananas, psyllium husk, and oat milk. My favorite! Done after my own recipe.

I enjoyed making them, eating them, and my stomach felt goooooood!

 

When I lost weight for the last time I healed my diet-mentality, and I created TRUST.

I TRUST myself to never ever spend time negotiating if buying chocolate or nuts from the gas station or grocery stores is a good or bad idea.

 

I TRUST myself to never needing alcohol to “take off the edge” of a busy vet-day. In fact, I LOOOOOOVE EDGES. They are delightful. The growth/the fails exist at the edges.

 

I TRUST myself to never ever feel that I will miss out if I don’t eat the “included in the price”-breakfast at four-five star hotels or while traveling Business Class/ First Class.

 

I TRUST myself to never ever need the cookies after the front desk team overbooks my day.

I TRUST myself to be PATIENT. Patience feels amazing. Delaying gratification means enjoying the gratification for a longer period of time! - Just saying....
